Tasty Italian Tomato Sauce
This is one versatile dish that can be used in so many ways that I would highly recommend everyone to have in their repertoire of recipes. It is so simple but means serious serious business. It can be used in most Italian dishes from pizza bases to pasta sauces, and I think we all agree that pizza and pasta is pretty much the eternal bliss that is heaven. The smell will absorb you to the point of becoming a tomato yourself and eating this sauce making you a cannibalistic tomato lover. Now please get saucy with me and embrace the good life!!
To start with get your tomatoes. Now you can use tinned tomatoes here, it doesn’t make a huge difference, but it’s nice using fresh tomatoes as the flavour is much sweeter. Core the tomatoes and cut them in half, leaving the skin on for extra texture.
In a pan, heat your oil and sauté the onion for 2 minutes, then adding in your crushed garlic cloves for a further 2 minutes, stirring carefully not to burn the garlic.
After this add the tomatoes and put the lid on and simmer for 20 minutes, then mash with a potato masher.
After another 30 minutes of simmering on low heat, add your fresh basil and chilli, stir well then simmer for a further 45 minutes and really let it reduce down until the colour deepens. Salt and pepper to taste.
Now we are done. So easy right? This will last for 3-4 days chilled or will keep in the freezer for up to 3 months. Voila!
